- Prepare 2 of Granny Smith Apples cored and diced.
- Prepare of Small bunch of coriander chopped.
- It's 150 g of white crab meat.
- Prepare 1 of small red chilli deseeded and chopped finely.
- You need of zest of a lemon.
- It's 10 g of ginger grated.
- You need 50 ml of Mayonnaise.
- It's Half of an iceberg lettuce cut into strips.
- You need of Seafood Season that contains fennel.
- You need of GR's Vinaigrette (see ingredients below).
- It's 100 ml of extra virgin olive.
- It's 30 ml of white wine vinegar.
- You need of sea salt and pepper.
- It's of GR's Lemon Confit (see ingredients below).
- Prepare 1 of large lemon washed.
- You need 50 g of caster sugar.
- It's of Halved lemon grass.
- You need 150 ml of water.
Crab and Apple Salad step by step
- Make Confit by slicing lemons very thin. In a pan add sugar and 150ml of water, stir sugar until dissolved. Add the lemongrass when the liquid boils. Simmer for a few mins and add the lemon slices. Poach for about 10 mins. Leave to cool on the side until needed..
- In a bowl mix apples, coriander, crabmeat, chilli, lemon zest, ginger, slices of lemon confit and mayonnaise..
- Vinaigrette- mix the oil, white wine vinegar and salt/pepper. Use a blender or whisk until it emulsifies. Keep to one side..
- Place shredded lettuce in a bowl and pour in the vinaigrette..
- On a plate place the lettuce and spoon the crab mixture, sprinkle seafood seasoning and add extra coriander..
