  2. Prepare of Small bunch of coriander chopped.

  4. Prepare 1 of small red chilli deseeded and chopped finely.
  5. You need of zest of a lemon.
  6. It's 10 g of ginger grated.
  7. You need 50 ml of Mayonnaise.
  8. It's Half of an iceberg lettuce cut into strips.
  9. You need of Seafood Season that contains fennel.
  10. You need of GR's Vinaigrette (see ingredients below).
  11. It's 100 ml of extra virgin olive.
  12. It's 30 ml of white wine vinegar.
  13. You need of sea salt and pepper.
  14. It's of GR's Lemon Confit (see ingredients below).
  15. Prepare 1 of large lemon washed.
  16. You need 50 g of caster sugar.
  17. It's of Halved lemon grass.
  18. You need 150 ml of water.

Crab and Apple  Salad step by step

  1. Make Confit by slicing lemons very thin. In a pan add sugar and 150ml of water, stir sugar until dissolved. Add the lemongrass when the liquid boils. Simmer for a few mins and add the lemon slices. Poach for about 10 mins. Leave to cool on the side until needed..
  2. In a bowl mix apples, coriander, crabmeat, chilli, lemon zest, ginger, slices of lemon confit and mayonnaise..
  3. Vinaigrette- mix the oil, white wine vinegar and salt/pepper. Use a blender or whisk until it emulsifies. Keep to one side..
  4. Place shredded lettuce in a bowl and pour in the vinaigrette..
  5. On a plate place the lettuce and spoon the crab mixture, sprinkle seafood seasoning and add extra coriander..
